I have been in Hawaii the past week and have tried all kinds of food for the first time. It is always fun visiting new places and trying out local fare. Obviously in Hawaii there are tons of fresh fish options...and I have fallen in love with poke. And no it isn't pronounced poke...it is poh-KAY. I may have eaten it 4 meals in a row!

I've had Hawaiian style poke, shoyu poke, poke bowls, tako (octopus) poke, kimchi poke, and poke nachos (pictured above). The poke nachos were served over wonton chips, topped with ogo and eel sauce! And man it was FINE! Yes it is raw fish. Mostly ahi tuna, but I also had salmon and marlin.

There are Asian influences in a lot of the foods on Hawaii. From Korean BBQ to noodle dishes to sushi and kimchi. The above photo is from a Korean BBQ stand. Clockwise from the top left...spicy noodles, kimchi, poke, and kalbi.

Talking with some of the locals at a BBQ the other night, one of the guys mentioned "spotted poke". So, of course I wanted to know more of what it was! The deer on the islands here are Axis Deer... Axis Deer are spotted...hence "spotted poke"! We talked out how it's made and what to do...and yes I will be making it as soon as I can!
